“STEVE'S BOURBON BAKED BEANS” IS IN:

STEVE'S BOURBON BAKED BEANS 
8 slices maple-flavored bacon
1 lg onion, chopped
3 minced garlic cloves
1/2 tsp. salt
1/2 cup bourbon whiskey or 1/4 cup maple syrup
3 (19.75 oz each can) baked beans
1/4 cup honey-mustard
3 tbsp. apple cider vinegar

Preheat oven to 400°F.

In ovenproof pot over medium-high heat, cook bacon until crisp. Drain on paper towels.

Cut 2 bacon slices in half and chop the remaining slices.

Sauté onion in drippings in same pot over medium heat. Add minced garlic and salt, stirring occasionally for 3-4 minutes. Stir in bourbon or syrup, scraping up browned bits from bottom of pot, boil 1 minute. Stir in baked beans, mustard and chopped bacon.

Bake, uncovered, until hot and bubbly, 45 minutes. Stir in vinegar.

Serve garnished with reserved bacon slices.

This sounds out of this world....but also sounds like it would feed an army. I am alone - so trying to figure out a way to break this "way down" to serve only 2-4 for myself with some leftover.
