STEVE'S BOURBON BAKED BEANS | |
8 slices maple-flavored bacon 1 lg onion, chopped 3 minced garlic cloves 1/2 tsp. salt 1/2 cup bourbon whiskey or 1/4 cup maple syrup 3 (19.75 oz each can) baked beans 1/4 cup honey-mustard 3 tbsp. apple cider vinegar Preheat oven to 400°F. In ovenproof pot over medium-high heat, cook bacon until crisp. Drain on paper towels. Cut 2 bacon slices in half and chop the remaining slices. Sauté onion in drippings in same pot over medium heat. Add minced garlic and salt, stirring occasionally for 3-4 minutes. Stir in bourbon or syrup, scraping up browned bits from bottom of pot, boil 1 minute. Stir in baked beans, mustard and chopped bacon. Bake, uncovered, until hot and bubbly, 45 minutes. Stir in vinegar. Serve garnished with reserved bacon slices. Submitted by: Sherry Monfils |
