VIRGINIA BEACH CHESS PIE 
1 pie shell
4 tsp. cornstarch
4 eggs, room temp.
5 tbsp. melted butter, cooled
1/2 c. sugar
2 tsp. grated lemon peel
1/3 c. lemon juice

Preheat oven to 400 degrees. Bake pie shell for about 5 minutes. Remove from oven to cool. Reduce oven to 325 degrees.

Combine sugar and cornstarch in large bowl and mix, pressing out any lumps. Stir in lemon peel. Beat in eggs, one at a time. Stir in lemon juice and blend in the butter. Pour filling into cooled pie shell. Bake until puffed and golden brown, approximately 50 minutes. Cool.

(The filling will thicken and fall somewhat while cooling and acquire a jelly like texture.)
