FRIED GREEN TOMATOES 
3 med. green tomatoes
2 beaten eggs
1/2 c. oil
Salt and pepper
1 c. seasoned bread crumbs
1/4 c. grated Parmesan cheese

Slice tomatoes (1/4 inch wide), remove as many seeds as possible and sprinkle with salt and pepper. Beat 3 eggs with Parmesan cheese.

Dip tomato slices into the egg batter, and then into seasoned bread crumbs.

Prepare a pizza pan with part of the oil, heat in oven for five minutes, remove from oven. Lay slices on the heated pan. Cook 10 minutes on each side, until tender (or fry in frying pan).

Can be layered with tomato sauce and grated Mozzarella (1/2 cup grated). Bake for 1/2 hour at 350 degrees. Can also be used without the sauce, as a vegetable.
