SOPAPILLAS 
3 c. flour
1/4 c. shortening
1 tsp. salt
2 tsp. baking powder
1 c. warm water
3 c. shortening for deep frying

Add first 4 ingredients adding water a little at a time. Mix until dough leaves sides of the bowl, or about 2 minutes. Knead 5-6 minutes. Let rest for 30 minutes. Take dough 2 inches in diameter and roll very thin (1/8 inch thick). Cut dough in squares and deep fat fry for about 400 degrees. Turn over when lightly golden brown and fry a few seconds longer. Let drain on a paper towel. Serve with honey and syrup.

SYRUP RECIPE:

2 c. sugar
1/4 c. water

In a heavy pan, put sugar and let cook over low heat until melted. Then add water. Stir until slightly thickened. Serve over sopapillas.
