SPINACH BALLS 
2 (10 oz.) pkgs. frozen chopped spinach
2 c. seasoned croutons (any flavor)
1 c. parmesan cheese, grated
4 eggs, lightly beaten
1/2 c. salt-free butter, softened to room temperature
1/2 tsp. white pepper
1/4 tsp. nutmeg

Cook spinach according to package directions. Drain well. Place in strainer or use back of a spoon to press out water. In blender, grind crouton into fine crumbs. Mix thoroughly the spinach, crumbs, cheese, eggs, butter and seasoning. Shape into ball on a cookie sheet lined with waxed paper. Freeze about 1 hour. Remove from freezer and place in airtight container, such as plastic bags. Can be frozen up to 6 weeks. To serve, place on a ungreased cookie sheet. Bake in preheated oven 350 - 400 degrees for 10 - 15 minutes until firm.
