PINEAPPLE COOLER | |
1 can (8 oz.) crushed pineapple in juice 1 pkg. (4 serving size) lime flavor sugar-free gelatin 3/4 c. boiling water 1/2 c. lemon sherbet, softened Drain pineapple, reserving juice. Add water to juice to make 1/2 cup. Dissolve gelatin in boiling water. Measure 1/2 cup gelatin and add sherbet; stir until completely melted. Add half the pineapple. Pour into 3 cup bowl or 5 dessert glasses. Chill until set but not firm, about 5 minutes. Add measured liquid and remaining pineapple to remaining gelatin. Chill about 2 hours. Garnish with fruit and whipped topping if desired. Makes 5 servings - 60 calories per serving. |
