PINEAPPLE COOLER | |
1 (8 oz.) can crushed pineapple in juice 1 (4 oz.) pkg. Jello brand lime flavor sugar free gelatin 3/4 c. boiling water 1/2 c. lemon sherbet, softened Drain pineapple, reserving juice. Add water to juice to make 1/2 cup. Dissolve gelatin in boiling water. Measure 1/2 cup gelatin and add sherbet. Stir until completely melted. Add half the pineapple. Pour into 3-cup bowl or 5 dessert glasses. Chill until set but not firm, about 15 minutes. Add measured liquid and remaining pineapple to remaining gelatin. Chill until thickened and spoon into bowl. Chill about 2 hours. Garnish with fruit and whipped topping, if desired. Makes 2 1/2 cups or 5 servings. Only 60 calories per serving. |
