TIAN OF ZUCCHINI POTATO AND TOMATO | |
2 zucchini 2 tomatoes 2 baking potatoes 1/4 c. olive oil Fresh basil and/or crushed dry oregano Salt and pepper Thinly slice the vegetables. Lightly oil a shallow casserole. Arrange in casserole, alternating slices of each vegetable. Coat with olive oil and bake at 400 degrees for about 40 minutes, until vegetables are slightly crisp around edges. Sprinkle with basil/oregano, salt and pepper. Serve hot. |
