GREEK POTATOES 
6 potatoes with skins, sliced
2 small yellow squash or green zucchini
1 medium onion, chopped
zest of 1 lemon
juice of 1/2 lemon
fresh oregano
2 tomatoes, sliced
6 oz. Feta cheese
olive oil

Combine potatoes, onion, squash, lemon zest and juice in oiled 9 x 13 glass baking dish. Cover with sliced tomatoes. Sprinkle with Feta and oregano and drizzle with olive oil. Season with salt and pepper.

Bake 1 hour at 375°F. Uncover and bake 10 to 15 additional minutes.
