GREEK POTATOES 
2 lb. unpeeled red potatoes, cut in 2 inch cubes
6 tbsp. olive oil
4 cloves garlic, minced
2 tbsp. fresh parsley, minced
1 tsp. dried basil
1 tsp. dried oregano
Salt and pepper to taste

Preheat oven to 350 degrees. Combine all ingredients and toss well. Spread into a single layer in an ovenproof dish. Bake 1 hour or until browned slightly and cooked through. Turn once 1/2 way.
