MANDARIN CHICKEN 
Flour seasoned with salt, pepper and garlic powder
2 lb. boneless chicken breasts, halved
2 tbsp. butter
2 tbsp. oil
1 sm. can mandarin oranges with juice drained and reserved
4 tbsp. lemon juice
1/2 c. orange juice
2 tbsp. honey
2 tsp. soy sauce
1/2 tsp. ground ginger
1 can sliced water chestnuts
1 sm. can pineapple chunks, drained
1 bunch broccoli flowerettes, steamed 5 min.

Dredge chicken in the seasoned flour. In large skillet melt the butter. Add oil and heat until hot. Add chicken and brown on both sides.

Mix juice from mandarin oranges, lemon juice, orange juice, honey, soy sauce and ginger. Pour the sauce over the chicken, cover and simmer 30 minutes.

When chicken is fork tender, add the oranges, pineapple chunks, water chestnuts and broccoli and simmer just until heated through.
