BRAN MUFFINS | |
3/4 c. flour 2 1/2 tsp. baking powder 1/4 tsp. salt 1/3 c. sugar 1 egg, beaten 3/4 c. milk 3 tbsp. shortening, melted 1 1/2 c. wheat bran flakes cereal Combine flour, baking powder, salt and sugar in a medium mixing bowl. Mix well. Combine egg and milk. Stir into flour mixture. Add shortening. Mix only to dampen flour. (Dough will be lumpy.) Fold in bran flakes. Pour mixture into greased muffin tin 1/2 full. Bake 400 degrees for 20 to 25 minutes. |
