PERFECT PIZZA CRUST WITH SAUCE
SUPREME
 
CRUST:

1 pkg. active dry yeast
1 3/4 c. warm water (110 degrees)
3 tbsp. salad oil
1 tbsp. honey
1 tsp. salt
4 c. unsifted all purpose flour

SAUCE:

1 med. onion, chopped
1 clove garlic, minced or pressed
2 tbsp. salad oil
1 tbsp. oregano
2 tbsp. parsley
Salt and pepper to taste
2 (8 oz.) cans tomato sauce

Dissolve yeast in warm water in large bowl; beat in the oil, salt and honey. Add flour and beat in enough additional flour (about 1 cup) to form a stiff dough. Turn onto a well floured board and knead it until smooth, about 3 minutes. Put dough into a greased bowl; cover it and let rise in a warm place until it doubles in size. Punch down the dough and divide it into thirds for thin crust or halves for thicker crust. Roll, pat and stretch dough to fit pizza pan, remembering to form an edge. Bake on the lowest rack in 500 degree oven for about 5 minutes for thin crust or about 7 minutes for thick crust. Spread the baked crust with sauce and condiments and bake again on lowest rack of 500 degree oven for 5 to 8 minutes.

Sauce: Saute the onion and garlic in oil until onion is limp and golden; add tomato sauce and seasonings. Simmer for 15 minutes, stirring often.

Suggestion: Zip the pizza under the broiler for about 1 minute to give the cheese a golden crust.

Helpful Hints: Combining whole wheat flour with white flour adds a nice touch. Peanut or sesame seed oil gives an extra flavor to the crust. Crust can be prepared much earlier in the day and kept at room temperature until you are ready to add the sauce and toppings.

Helpful Hints for Sauce: Add a little sweet basil, thyme or chili powder to your sauce according to your taste. Lots of garlic can be tasty, too! Add fresh, chopped and skinned tomatoes to the sauce. Hot sauces of many types can add a real taste treat for spicy food lovers.

Topping Suggestions: Chopped green peppers; chopped, spicy jalapeno peppers or Fresno chili peppers; sliced fresh tomatoes; chopped green onions; sliced zucchini, crookneck squash or steamed carrots; sliced raw mushrooms; chopped or sliced olives (green or black); various meats, fish or cheeses of all sorts. Be adventurous; try adding different types of toppings until you discover the one you like best. Of course, one could experiment forever and always find something new and different to try. Such as: Pizza crust with raisins, nuts, sliced apples and other fruits (fresh or canned), topped with brown sugar or honey, cinnamon, nutmeg and allspice; pizza with chopped ham, pineapple and tomato pizza sauce; vegetarian pizza with any vegetables that catch you eye (sliced cauliflower, thinly sliced broccoli, chopped spinach, chopped eggplant) with lots of Parmesan cheese.
