APPLE CHICKEN 
4 chicken cutlets
1/2 c. chopped onions
1 c. chopped apples, peeled
4 tbsp. applesauce, unchilled
1 c. chopped celery
1 tsp. salt
Oil

Saute celery, onions and apple slices in lightly oiled skillet. Add salt and saute until onions turn brown. Roll 2 tablespoons of above in chicken cutlets, secure with 2 wooden toothpicks. Heat 1/2 inch oil in skillet to 375 degrees. Place cutlets in skillet, turn when lightly browned. Cook until cutlets are done about 10 minutes for each side. Place 2 cutlets on a dinner plate and cover each with a tablespoon of applesauce. 2 servings.
