CHICKEN AND APPLES 
3 Cortland apples
2 lg. onions, sliced
3 boneless chicken breasts
1/2 tsp. thyme
Pepper and poultry seasoning
1 c. shredded Swiss cheese
1/2 c. Parmesan cheese
1/4 c. bread crumbs
4 tbsp. sherry
4 tbsp. butter

Saute onions and apples (peeled, cored and sliced) in butter about 10 minutes. Put in greased casserole dish. Put chicken on top. Sprinkle with pepper and poultry seasoning.

Combine cheeses and bread crumbs and thyme. Sprinkle over chicken. Drizzle sherry over all and cover.

Bake at 350 degrees for 1/2 hour, covered; 1/2 hour uncovered.

Be daring...try Cheddar instead of Swiss; vermouth instead of sherry; add a tart Granny Smith apple and of course, add mushrooms.
