CLOUD BISCUITS 
2 c. sifted flour
1 tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening, can use part butter
1 beaten egg
2/3 c. milk

Sift dry ingredients together; cut in shortening, until mixture resembles coarse crumbs. Combine egg and milk; add to flour, stir it all in at once. Stir until dough follows fork around bowl. Turn out on floured board, knead gently about 20 strokes. Roll out to 3/4 inch thickness. Cut with 2 inch cutter; cut straight down through the dough, no twisting. Place on ungreased cookie sheet 1 or 2 inches apart for crusty edges. Bake 10 to 14 minutes at 450 degree oven. Makes 2 dozen.

For drop biscuits; increase milk to 3/4 cup; omit kneading; drop dough from tablespoon onto baking sheet.
