ZUCCHINI CREAM SAUCE 
4 zucchini
4 tbsp. butter
Juice from 1/2 lemon
1/4 tsp. nutmeg
1/2 pt. heavy cream

Slice zucchini, unpeeled, in thin slices. Melt butter in deep pan, add zucchini and cook over high heat, stirring constantly, for 1 or 2 minutes. Add lemon juice, nutmeg and cream; bring to a boil. Cook until just slightly thickened. Season with salt (optional) and serve over pasta.
