SOUR CREAM AND CHEESE ZUCCHINI

4 med. zucchini, coarsely grated
Salt, to taste
4 tbsp. butter
1 med. onion, chopped
2 tbsp. flour
2 tbsp. milk
2 c. sour cream (may use low-fat variety)
2 c. cheddar cheese, grated (may use low-fat variety)
Grated Parmesan cheese

Place grated zucchini in a colander. Sprinkle with salt to taste. Let drain for 3 hours. Press out excess moisture. In a large skillet melt butter. Stir in onion, saute until softened. Stir in zucchini, saute mixture until it begins to stick to bottom of skillet. Stir in flour and milk. Cook 2 minutes. Remove from heat. Stir in sour cream and cheese. Taste for seasoning. Sprinkle with Parmesan cheese. Bake uncovered at 350 degrees for 30 minutes. Serves 6.
