ZUCCHINI IN CREAM 
6 sm. zucchini, cut in 1/2 in. slices
2/3 c. sour cream
1 tbsp. butter
1/2 c. grated cheddar cheese
1 tsp. salt

Simmer zucchini 10 minutes, in enough water to cover. Drain and place in 8-inch pie pan. Heat oven to 375 degrees. Combine in a saucepan the sour cream, butter, salt, and cheese. Heat at low heat until blended. Pour over zucchini. Top with bread crumbs and additional cheese. Bake 10 minutes until cheese is melted.
