ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 loaf pans
2 c. grated zucchini
2 tsp. vanilla

Beat eggs until fluffy. Add oil, sugar, vanilla, zucchini, and mix well. In another bowl, mix 3 cups self-rising flour and 3 teaspoons cinnamon. Add to eggs. Add 1/4 cup nuts and mix. Bake at 325 degrees for about 1 hour.
