ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
1 tbsp. vanilla
2 c. loosely packed, grated zucchini
2 c. flour
1 tbsp. cinnamon
1 tsp. salt
2 tsp. baking soda
1/4 tsp. baking powder
2 greased & floured loaf pans

Beat the eggs until fluffy. Add the sugar and the oil and the vanilla and mix until thick and lemon colored. Stir in the zucchini. Add the flour, cinnamon, salt, baking soda and baking powder. Put into the loaf pans. Bake at 350 degrees for 40 to 60 minutes. Cool in pans 10 minutes.
