PINEAPPLE ZUCCHINI BREAD | |
3 eggs 1 c. oil 2 tsp. vanilla 2 c. zucchini, shredded 1 (8 oz.) can crushed pineapple 3 c. self-rising flour 1 1/2 tsp. cinnamon 1 tsp. nutmeg 1 c. nuts, chopped 2 (5 x 9 inch) loaf pans, greased Beat egg, oil, sugar and vanilla. Mix in flour and spices. Mix in pineapple. Stir in zucchini and nuts. Bake 1 hour at 325 degrees or until lightly brown. Do not overbake. |
