PINEAPPLE-ZUCCHINI BREAD 
3 eggs, beaten
1/2 c. oil
1/2 c. butter
2 tsp. vanilla extract
2 c. sugar
2 c. grated zucchini
1/2 c. drained crushed pineapple
3 c. flour
2 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1/2 tsp. allspice
1 c. raisins
1 c. chopped walnuts

Preheat oven to 350 degrees. Beat eggs well. Add oil, butter, sugar and vanilla and beat again. Stir in zucchini and pineapple, both well drained. Add dry ingredients, raisins and walnuts. Blend thoroughly. Pour into 3 greased loaf pans and bake for 1 hour or until toothpick in center of loaf comes out clean. Cool slightly before removing from pans. Freezes well if well wrapped.
