PINEAPPLE ZUCCHINI BREAD | |
3 eggs 2 c. sugar 2 tsp. vanilla 1 c. oil 3 c. flour 1 tsp. salt 1 tsp. baking soda 1 1/4 tsp. baking powder 2 c. grated zucchini 1 c. drained, crushed pineapple 1 c. chopped nuts 1/2 c. raisins Beat eggs until fluffy, add sugar, vanilla, oil, zucchini and sifted dry ingredients. Stir in pineapple, and raisins and nuts. Mix well and bake in 2 well greased loaf pans at 325 degrees for 1 hour. Check for doneness. |
