ZUCCHINI BREAD | |
3 tbsp. butter (pans) 3 eggs 1 1/4 c. oil 1 1/2 c. sugar 1 c. pecans, chopped 2 tsp. vanilla 2 c. raw zucchini, blended 2 c. flour 2 tsp. baking soda 1 tsp. salt 1 tsp. baking powder 2 tsp. each cinnamon, cloves, ginger & nutmeg Beat eggs, oil and vanilla until thick. Fold in zucchini. Sift together all dry ingredients and fold into zucchini mixture. Add pecans. Pour into buttered loaf pans, bake at 350 degrees for 1 hour and 15 minutes. |
