1 1/2 c. fat
3 med. potatoes
Salt & pepper
1 (7 oz.) can Spam, cut into strips
1/2 c. chopped onion
1/2 c. chopped green pepper
3 eggs, beaten
Milk
1/2 c. shredded Cheddar cheese

Melt the fat in a large skillet. Pare and slice the potatoes. Spread half of the potatoes in the skillet. Sprinkle with salt and pepper. Arrange half of the Spam strips over the potatoes in spoke fashion. Add another layer of potatoes, the onion, green pepper and Spam strips. Cover and cook over low heat for about 20-30 minutes.

Beat the eggs with a small amount of milk. Pour the eggs over all. Cover and cook until the eggs are set, about 10 minutes. Top with cheese. Cover and cook until the cheese melts. Serves 4-6.
