CARROT CASSEROLE 
2 c. carrots, sliced
1/2 onion, chopped
2 tbsp. butter
12 saltine crackers
2/3 c. water
1/2 c. grated cheese

Cook carrots until tender. Pour off water and mash. Add onion and butter. Crumble crackers into carrots; add water. Mix well. Pour into greased casserole dish. Sprinkle grated cheese over top and bake at 350 degrees for 30 minutes.
