OVEN CRUSTY FISH 
1 egg
1 tbsp. water
3/4 tsp. Tabasco sauce
1/2 tsp. salt
1 1/2 lbs. fish fillets, fresh or frozen (flounder, cod or haddock, etc.)
1 c. cornflake crumbs
2 tbsp. butter
Lemon wedges
Finely chopped parsley

Combine egg, water, Tabasco and salt - beat until blended - drain fish fillets and dip in egg mixture - coat generously with cornflake crumbs. Place on foil- lined baking sheet. Drizzle with melted butter. Bake in moderate oven (375 degrees) 20-30 minutes or until fish flakes easily when tested with fork. Serve with cut lemon wedges dipped in finely chopped parsley. Serves 6.
