OVEN "FRIED" FISH FILLETS 
1" thick (firm flesh) fish fillets
Corn flakes (make into coarse crumbs by rolling with a rolling pin)
2 tbsp. oil
1/2 c. buttermilk or milk

Wash and dry fish fillets. Dip in milk or buttermilk. Season corn flake crumbs (I use a spicy seasonall or Cajun seasoning) and roll fish in the crumbs. Place on greased cookie sheet and drizzle oil on top. Cook for 10 minutes (or until fish is flaky) in 500 degree oven. DO NOT OVERCOOK!
