OVEN FRIED FISH 
1/4 c. butter
1 lb. fish fillets, cut into serving pieces
1 egg, beaten
2 tsp. lemon juice
1/2 tsp. salt
Pepper to taste
1/2 c. dried bread crumbs

1. In a 2 quart glass dish melt butter in high power microwave 1 1/2 to 2 minutes.

2. Combine beaten egg, lemon juice, salt and pepper. Dip fillets in mixture, then in bread crumbs. Arrange in buttered baking dish, turning to coat with butter.

3. Bake at medium power microwave 4-6 minutes or until fish flakes with fork.

4. May also be made in oven. Set oven at 350 degrees. Melt butter in oven then follow step 2 and bake 15-20 minutes until fish flakes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
