YOU'LL NEVER BELIEVE IT! 
Standing rib of beef (any size, any weight)
Salt to taste
Pepper to taste

This can be started mid-night, mid-morning or mid-afternoon. Don't ask why it works, it just does!

Place beef in roasting pan, uncovered. Bake at 375 degrees for 1 hour. Turn oven off. do NOT open the oven door at all.

For rare roast beef: 45 minutes before serving time, turn oven on to 300 degrees.

For medium roast beef: 50 minutes before serving time, turn oven on to 300 degrees.

For medium well beef: 55 minutes before serving time, turn oven to 300 degrees. That's all. Don't peek!
