CAN'T BELIEVE IT'S NOT PUMPKIN
PIE
 
1 can Redskin Kinney beans, drained
1 can (12 oz.) evaporated milk
2 eggs
2/3 c. sugar
1 1/4 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/8 tsp. ground ginger
1/8 tsp. salt
1 (9") unbaked pie shell

Combine all ingredients and mix at medium-high speed in blender for 1 minute. Pour mixture into pie shell and bake at 375 degrees for 30-35 minutes. Center of pie may be slightly loose, but will set as it cools. Chill and serve with whipped topping as desired.
