ZUCCHINI BREAD 
3 lg. eggs
1 c. Crisco oil
1 tsp. vanilla
2 c. sugar
2 c. raw, peeled and grated zucchini

3 c. flour
1/4 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1 c. chopped walnuts

Mix first five ingredients by hand. Add last six ingredients. Mix well by hand. Makes 2 loaves. Bake at 350 degrees for approximately 1 hour.
