SOFT GINGER COOKIES 
3 c. flour
1/2 tsp. salt
1/2 tsp. cinnamon
1 tbsp. ginger
1/8 tsp. nutmeg
1/2 c. shortening
1/2 c. sugar
1 egg
1 c. molasses
1 tbsp. vinegar
2 tsp. baking soda
1/2 c. boiling water

Sift 3 cups flour with salt and spices. Cream shortening and sugar. Add egg. Beat all together until light. Add molasses and vinegar, then sift dry ingredients. Last add baking soda dissolved in boiling water.

If necessary, add more flour to make a soft dough. Drop by teaspoons on greased cookie sheet. Sprinkle with sugar. Bake 8-10 minutes in 325 degree oven. Makes about 50 plump cookies.
