GREEK TOFU SALAD 
DRESSING:

1/2 c. olive oil
1/4 c. wine vinegar
1 tsp. basil
1/2 tsp. pepper
1/2 tsp. oregano
1/2 tsp. salt
3 cloves garlic, crushed

SALAD:

1 lb. tofu
3 tomatoes, cubed
3 cucumbers, sliced
1/2 lg. red onions, coarsely chopped
1 c. black olives
1 bunch spinach, washed well, dried & torn into bite size bits

Combine dressing ingredients and mix well. Cut tofu into 3/4 inch cubes and marinate for 30 to 60 minutes in dressing. Add salad ingredients, allow to marinate 1 to 2 hours. Makes 6 to 8 servings.
