CUCUMBER SAUCE 
Cut a medium unpared cucumber in half lengthwise, scraping out seeds. Grate cucumber (about 1 cup grated). Drain liquid from grated cucumbers.

Add: 1 tbsp. chopped green onion 1 tbsp. parsley 2 tsp. vinegar

Season to taste with salt and pepper. Chill. Serve over sliced tomatoes. Makes 1 1/2 cups cucumber sauce.
