PRESBYTERIAN BEAN SOUP | |
Equal amounts (3 tbsp.) : Pinto beans Navy beans Kidney beans Black eye peas Split peas Lentils Barley Lg. limas Baby limas Wash beans, place in large kettle. Cover with water, 2 inches. Add 2 tablespoons salt. Soak overnight. Drain in morning. Add 2 quarts of water and ham hocks or ham bone. Bring to boil. Simmer slowly 3 hours. Add 1 large chopped onion and 1 large can of tomatoes (or 1 quart home-canned tomatoes). Season with 1/2 to 1 teaspoon chili powder, 1 teaspoon lemon juice, 1 teaspoon sugar and 1/2 teaspoon pepper and salt. Remove ham hock, leave any ham. Simmer slowly 1 hour or more. |
