CHILE RELLENOS | |
2 (7 oz.) cans diced Ortega chiles 1 1/4 lb. jack cheese, grated 4 eggs, lightly beaten 1/2 c. milk 1 tsp. salt 1/4 tsp. pepper 1/2 tsp. dry mustard Line the bottom of a lightly oiled baking dish with half of the chiles. Sprinkle half of the cheese over chiles. Add the other half of the chilies, and then the remaining cheese. Mix eggs, milk, and seasonings. Pour over the chiles and cheese. Bake at 350 degrees for 30-35 minutes, or until lightly browned. Let it set 5 minutes. Serves 6. |
