CHILE CASSEROLE 
1 lg. & 1 sm. can whole chiles (Ortega), rinsed & seeded
1 lb. Monterey Jack cheese, grated
1/2 lb. sharp Cheddar cheese, grated
4 eggs, beaten
1 lg. can evaporated milk
2 tbsp. flour
Salt to taste

Grease a rectangular Pyrex dish. Layer chiles first, alternating with both cheeses, ending with cheeses. Mix the last 4 ingredients well and pour over cheese. Bake for 45 minutes at 350 degrees. Optional: Top with green chile salsa.
