LEMON-PARSLEY FISH | |
1 lb. fish fillets (sole, flounder, cod) 1/2 c. butter 2 tbsp. flour 2 tbsp. fresh lemon juice 1 tbsp. fresh snipped parsley 1/4 tsp. salt (optional) 1/8 tsp. ground pepper (optional) 1/8 tsp. celery seed 2-4 slices fresh tomato (optional) Place butter in rectangular microwave baking dish. Blend remaining ingredients, except tomato. Coat both sides of fish with mixture and arrange in dish. Bake on high until fork tender, 20 minutes. Remove from microwave and serve with sliced tomatoes on top. This recipe may also be made in a conventional oven at 350 degrees for 20-25 minutes. The sliced tomato may also be placed on top of fish after baking and broiled on fish, approximately 2-3 minutes. |
