BANANA SPICE LAYER CAKE 
2 1/2 c. sifted cake flour
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. cloves
1 1/4 tsp. cinnamon
1 1/2 c. mashed, ripe bananas
1/2 tsp. nutmeg
1/2 c. shortening
1 1/2 c. sugar
2 eggs
1 tsp. vanilla extract

Sift together flour, baking powder, soda, salt, spices. Beat shortening until creamy. Add sugar gradually and continue beating, until light and fluffy.

Add eggs, 1 at a time, beating after each addition. Stir in vanilla. Add flour mixture alternately with bananas a small amount at a time, beating after each addition, until smooth. Turn into 2 (9 inch) layer cake pans. Bake at 375 degrees for about 25 minutes.

FROSTING:

1/2 c. ripe mashed bananas (1 lg.)
1/2 tsp. lemon juice
1/4 c. butter
3 1/2 c. sifted confectioners' sugar

Mix together banana and lemon juice. Beat butter until creamy. Add sugar and banana alternately, a small amount at a time, beating until light and fluffy.
