3-LAYER BANANA CAKE 
2 cups sugar
2 eggs
1 cup shortening (2 sticks butter)
3/4 cup buttermilk
3 cups all-purpose flour
2 tsp. baking soda
2 tsp. vanilla extract
2 cups mashed ripe bananas

Mix sugar, eggs, and shortening; add buttermilk, flour, baking soda and vanilla. Add mashed bananas and mix well. Bake in 3 layer cake pans at 350°F for 30 to 35 minutes.

FROSTING:

1 (8 oz.) pkg. cream cheese, softened
1 (1 lb.) box confectioners' sugar
1 cup chopped pecans

Soften cream cheese 2-3 hours; cream and add confectioners' sugar. Blend well and add 1 cup chopped nuts.

I have to tell you this is the BEST BANANA CAKE... EVER!!! If anyone wants to try it, PLEASE follow the recipe as written. If you feel the cake needs tweaking... making a different cake recipe would be a good idea... This cake needs no tweaking!

FYI, I made this cake as the recipe calls for, and it is awesome and so is the frosting recipe. I made a 3 layer... next time I will double the frosting recipe... the 3 layer filling used up most of the frosting.
