3-LAYER BANANA CAKE | |
2 cups sugar 2 eggs 1 cup shortening (2 sticks butter) 3/4 cup buttermilk 3 cups all-purpose flour 2 tsp. baking soda 2 tsp. vanilla extract 2 cups mashed ripe bananas Mix sugar, eggs, and shortening; add buttermilk, flour, baking soda and vanilla. Add mashed bananas and mix well. Bake in 3 layer cake pans at 350°F for 30 to 35 minutes. FROSTING: 1 (8 oz.) pkg. cream cheese, softened 1 (1 lb.) box confectioners' sugar 1 cup chopped pecans Soften cream cheese 2-3 hours; cream and add confectioners' sugar. Blend well and add 1 cup chopped nuts. |

FYI, I made this cake as the recipe calls for, and it is awesome and so is the frosting recipe. I made a 3 layer... next time I will double the frosting recipe... the 3 layer filling used up most of the frosting.
