RED BEANS AND RICE 
2 c. dried red kidney beans
1/2 tbsp. salt pork, minced
2 whole onions, chopped
1 lg. clove garlic, crushed
2 tbsp. green pepper, chopped
1 tbsp. parsley, chopped
Salt and pepper to taste
2 c. cooked rice

Soak beans overnight. Drain. Brown salt pork in skillet. Add onions, garlic and green pepper, saute. Add about 1 tablespoon of flour and brown. Add beans, parsley, salt and pepper and enough water to cover. Simmer 4 hours or until done. Place rice in casserole and pour beans over top. Garnish with parsley.
