RED BEAN AND RICE 
2 lb. dried red beans
1 lb. pork, cut in 1 inch cubes
1 c. chopped onion
1/2 c. carrot, chopped
1/2 c. celery
2 tbsp. vinegar
2 bay leaves
1 tsp. salt
1/2 tsp. pepper
Hot sauce
Rice

Sort and wash beans; soak overnight in 2 inches of water. Drain, cover with water, bring to a boil. Add next 6 ingredients; stir gently. Reduce heat, cover, simmer 2 1/2 to 3 hours or until tender and a thick gravy is formed, add water to prevent sticking. Stir in salt and pepper. Serves 8 - 10 with hot sauce and rice.
