STRAWBERRY CITRUS TWIST 
1 c. fresh pineapple chunks or canned in natural juice
2 c. fresh halved strawberries
1/4 c. orange marmalade
1 tbsp. lemon juice
2 tbsp. orange juice

Combine fruit in a large bowl and toss gently. Combine marmalade and lemon juice and orange juice and mix well. Pour over fruit mixture. Cover and refrigerate for several hours or overnight, stirring once. Serve in parfait dessert dishes and garnish with mint.

NOTE: Other fresh fruit may be substituted for pineapple and strawberries. Some of the new exotic fruit, like star fruit, could be substituted for the pineapple. Yields 4 (1/2 cup) servings.
