EMERALD GREEN RICE 
3 c. cooked rice
1 c. chopped fresh parsley
1/2 c. grated cheddar cheese
1/2 c. chopped onion
1 (4 oz.) can chopped green chilies, drained
1 clove garlic, minced
1 2/3 c. milk
2 eggs, beaten
Juice of 1 lemon
Season salt to taste
1/2 tsp. pepper
Paprika

Mix all ingredients until thoroughly blended. Pat firmly into greased 2 quart pan. Sprinkle with paprika. Bake at 350 degrees for 45 minutes or until firm.
