VIDALIA ONION PIE | |
1 c. finely crumbled Ritz crackers 2 tsp. butter 2 eggs 3/4 tsp. salt 1/4 c. grated sharp cheddar cheese 1/2 stick butter, melted 2 c. Vidalia onions, thinly sliced 3/4 c. milk Dash pepper Paprika Parsley Mix cracker crumbs with melted butter. Press into 8-inch pie plate. Saute onions in 2 tablespoons butter until clear, but not brown. Spoon into crust. Beat eggs together with milk, salt, pepper and pour over onions. Sprinkle with cheese and paprika. Bake at 350 degrees for 30 minutes or until a knife inserted comes out clean. Sprinkle with parsley before serving. Serves 6-8. |
