BITE-SIZE QUICHE 
3 eggs
1 lb. cottage cheese
3 tbsp. sour cream
1 c. shredded cheddar cheese
1/2 c. Bisquick
1/4 tsp. salt
1/4 c. melted butter
1 can chopped green chilies (I use half this amount)
Approximately 1 c. cooked sausage

Combine all ingredients well. Fill well-greased mini-muffin tins 2/3 full. Bake in a preheated 375 degree oven for 20 minutes. Serve at room temperature. These freeze well. Yield: 48-54 quiches.

I like to use half cheddar cheese and half Mozzarella cheese.
