CITY CHICKEN 
1 lb. pork (lean, cubed in 1 inch pieces)
1 c. seasoned bread crumbs
1 egg
1/4 - 1/3 c. milk
6 short wooden skewers
Oil for frying

Mix egg and milk together. Set aside. Arrange meat on sticks. Dip in egg mixture then roll in bread crumbs. Brown meat in oil until golden brown. Place in 350 degree oven 15 or 20 minutes until done.

I remember this too growing up. My Mom make it from scratch. One strip of cut veal on wooden stick, then a cut strip of pork all squeezed together until all tight on a stick. Then she'd dip in egg batter and roll in crushed bag of saltine crackters & Pepper added and then dip it again and roll again in crushed crackers. Then fry all sides in a cast iron skillet on all sides until golden brown, but she'd then put all in the pressure cooker to finish them off with faster cooking for abut 20 minutes at high pressure as I recall. Loved them !

Very good. I like to take and put them in the crock pot after browning along with a can of cream of chicken soup and a can of mushrooms. Cook on low for 4-6 hours and serve over mashed potatoes or noodles.

Your idea about the cream of chicken and can of mushrooms in the crockpot sounds great. Only problem I have is that my husband does not like mushrooms. Any other suggestions?

I have been making this for years and the missing ingredient that makes this so delicious is Parmesean cheese. Add a cup of it to the bread crumbs or equal parts of cheese and bread crumbs.

I had been looking for this recipe for a long time, I remember as a child my mother serving City Chicken, I had asked others in my family about it, they said they had never heard of it. I loved the City Chicken

Cook it with a KISS (keep it simple stupid). This recipe does just that... Very quick. Easy. Very good. Love it. Just add your seasonings to suit your family.
