QUICK APPLE-CARROT BREAD 
1 1/2 c. (2 med.) peeled, shredded apples
1/2 c. (1 med.) shredded carrot
1/4 c. butter
1/2 tsp. lemon extract, if desired
2 eggs
1 3/4 c. flour
2/3 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 chopped nuts

Heat oven to 350 degrees. Grease bottom only of 9 x 5 or 8 x 4 inch loaf pan. Blend first 5 ingredients. Add remaining ingredients, except coconut or nuts. Beat 3 minutes at medium speed. Stir in coconut or nuts. Pour batter into prepared pan. Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Remove from pan to cool. Refrigerate any leftovers. Makes 1 loaf. Good spread with butter or cream cheese, but moist enough to be enjoyed plain!
